Chicken Thighs or Breasts Basted with Butter and Vermouth


This dish seems almost too simple to be as good as it is

2 lb chicken breasts or thighs
1/4 cup butter
1/4 cup dry vermouth
Salt and pepper

Arrange the chicken in a shallow baking dish and dot with the butter.  Pour in the vermouth, sprinkle with salt and pepper and bake in a 350 degree overn 45 to 55 minutes.  Baste occasionally with the juices in the pan.  Serve in the juices.  Serves 4.
