Marinated Leg of Lamb


3 1/2 lb leg of lamb, boneless
1/4 cup olive oil
Juice of 1 lemon
1/4 cup white wine
1 minced clove garlic
1/4 teaspoon ginger
1/4 teaspoon pepper
2 tablespoon chopped onion
Preheat oven to 350 degrees F. In a small bowl, mix all ingredients together except lamb. Place lamb in a bowl and coat with marinade.  Refrigerate 30 minutes or longer. Place lamb on oven rack and bake for one hour. Remove meat from the oven and allow to rest for ten (10) minutes before carving.
