RIB EYE STEAK WITH ONION BLUE CHEESE SAUCE (Adapted from The Pioneer Woman)

Ingredients

  • 2 rib eye steaks (about 5 ounces each)
  • salt and freshly ground black pepper
  • 1/2 stick softened butter
  • 1/2 large yellow onion, sliced
  • 1/2 cup heavy cream
  • 1 1/2 to 2 tablespoons Worcestershire sauce
  • 1/3 cup crumbled blue cheese

Directions

  1. Preheat oven to 350 degrees.  Heat a skillet or fry pan on high heat and melt 1/4 stick of butter.
  2. Sprinkle the steaks with salt and pepper and sear both sides of the steaks in the fry pan/skillet for about 3 minutes on each side.  
  3. Place steaks in hot oven for 3 to 4 minutes per side to finish.  Remove from the oven and keep warm.
  4. Melt the remaining 1/4 stick of butter in a large skillet over medium-high heat, and then saute the onion until golden brown, 7 to 8 minutes.
  5. Pour in the cream, dash of salt and pepper and the Worcestershire sauce.  Let it bubble, then add the blue cheese and stir together to melt, adding more pepper or Worcestershire sauce to taste.
  6. Place the steaks on plates and spoon sauce over the top. 
  7. Serve with your favorite vegetable. 
  8. This recipe is easily doubled.
